The grapes are harvested towards the end of September. Maceration takes place in contact with the skin for 10-12 days at a temperature of 28°C. During this period, the wine is periodically pumped over the skins to achieve optimal extraction of anthocyanins and tannins. Alcoholic fermentation is complete and the further process takes place in stainless steel barrels. In February, part of the wine is poured into smaller steel tanks. The rest is aged in French oak barrels. Both wines are then mixed in almost equal parts.
