Santa Margherita was the first company to vinify the Pinot Grigio grape as a white wine. In this case, the must does not remain in contact with the skins, which would otherwise get a rusty color. After soft pressing, the must ferments for 10-15 days at 18°C. Once fermentation is complete, the wine is stored at a controlled temperature of 15-16°C in stainless steel barrels until it is time to bottle.
